Ingredients::
2 cans condensed milk
1 cup jack fruit (cut in small bits)
100 grams butter
1 tbsp lemon zest
1 cup powdered milk
granulated sugar (for rolling)
in a heavy thick teplon pan, melt butter
add condensed milk, stirring constantly
over low / medium heat
add jack fruit while stirring
cook until the mixture is thick
turn off the heat and add powdered milk
mix together until well incorporated
transfer the Pastillas into plate rub with butter
and let it cool down
form into desired shape (balls or logs)
roll Pastillas in granulated sugar
wrap in japanese paper or papel de Japon
or cellophane paper

Ingredients:
1 kilo beef
potatoes cut in squares
carrot cut in squares
red and yellow bell pepper
2 tbsp soy sauce
2 tbsp vinegar
1 cup chopped tomatoes
1/2 cup chopped onion
2 tbsp minced garlic
green and black olives
3 pieces hot chili pepper (siling labuyo)
bay leaves
ground black pepper / salt
green peas
3 tbsp liver paste
1/2 cup tomato sauce
marinate meat in i tbsp soy sauce, salt
ground black pepper, bay leaves for 30 minutes.
in a heavy sauce pan or cooking pot, add 1 tbsp
cooking oil and saute garlic onion and tomatoes
add pork, 2 tbsp vinegar, 1 tbsp soy sauce,
red bell pepper, hot chili, bay 2 pieces of
bay leaves, 1 cup of water cover and
simmer for about more or less than i hour.
after 30 minutes simmering, add 1/2 cup
tomato sauce and 3 tbsp liver paste
add potatoes, carrot, red and yellow bell pepper,
green peas, green and black olives (optional)
add more water if necessary
cover and bring to a boil
cook until meat is tender

for making Pastillas de Ube:
2 cups of ube halaya or fresh grated ube
or purple yam
2 cups condensed milk
1 tbsp lemon zest
1 cup powdered milk
granulated white sugar
for wrapping
papel de japon or flower paper
cellophane paper
in a heavy cooking pan pour condensed milk
cook in a low / medium heat until thick
add lemon zest and ube halaya
stir until well incorporated
add powdered milk and continue stirring
until the perfect pastillas texture
completely done...transfer pastillas in plate or
tray and let it cool down for an hour or more
form in log and cut as desired
coated with granulated white sugar
wrap the Pastillas
