Ingredients:
1 cup rice flour
2 tsp baking powder
1/2 tsp salt
1 cup granulated sugar
70 grams softened butter (R.T)
3 raw eggs
1 cup coconut milk
5 tbsp fresh milk
Topping:
grated cheese
fresh grated coconut
salted eggs
butter or margarine
combine flour, baking powder and salt
stir and set aside...
beat butter until creamy texture
gradually add sugar and continue beating
add eggs one at a time
gradually add flour mixture
add coconut milk and fresh milk
beat to blend thoroughly
bake 15 minutes in preheated oven (375 F)
after 15 minutes baking arrange sliced salted
eggs on top of cake and sprinkle with grated
cheese, return cake to oven and bake for another
15 to 20 minutes...
brush top with butter or margarine
soon as it comes out from the oven
serve with fresh grated coconut
