Spicy Chicken Caldareta with coconut milk or gata...
Spicy Chicken Caldareta recipe
(please watch video below for cooking procedure)
Ingredients:
1 kilo of chicken ( whole chicken)
2 cups coconut milk (gata)
2 tbsp vinegar bay leaves
2 1/2 tbsp soy sauce soup stock
1 1/2 cups tomato sauce star anise
3 tbsp liver spread hot chili pepper
1 tbsp minced garlic ground black
1/2 cup onion chopped pepper
1 cup tomato chopped salt
1 red bell pepper water
4 medium size potatoes cooking oil
2 medium size carrots
marinate chicken with soy sauce
lemon juice, ground black pepper
and salt, marinate for an hour
In cooking pan saute garlic, onion,
and tomatoes
Add chicken stir, simmer covered
for at least 2 minutes
Add spices
add red bell pepper
add water
cover and simmer for 5 minutes,
add liver spread, and simmer
again in a low / medium heat
add potatoes and carrots, cover and simmer
for 20 to 30 minutes or until chicken
is tender
add remaining red bell pepper and green peas,
turn off the heat, now our Caldareta is done!

"Adobong Kangkong"
Adobong Kangkong is a simple and easy to cook, but healthy vegetable dish,Kankong or water spinach simmered in vinegar, soy sauce and other spices, adding fresh or canned squid makes this recipe more tasty and delicious...
Ingredients:
2 bundles of kangkong
250 grams fresh or canned squid
2-3 tbsp vinegar
2-3 tbsp soy sauce
1 tsp salt
1/2 tsp ground black pepper
1 tbsp minced garlic
1/2 cup onion chopped
2-3 tbsp water
1 tbsp cooking oil
Heat oil in cooing pan
Saute garlic, onion and squid, stir
Add liquid from canned squid, vinegar,
soy sauce,salt and ground black pepper
Cover and simmer for few seconds
Add seasoning according to own taste
then add kankong
Cover and simmer again for few seconds
Don''t over cooked Kangkong

"Mango Cheesecake"
Get this very simple and easy way of making healthy and delicious Mango Cheesecake recipe,flavored with the combination of cream cheese and mango puree...
Mango Cheesecake recipe

Ingredients:
Crust:
1 1/2 cups graham crackers crumbs
3 tbsp melted butter
1 tbsp granulated sugar
Mango Cheesecake:
1 cup mango puree
1 cup granulated sugar
400 grams cream cheese (room temperature)
2 large eggs
lemon zest (from 1 lemon)
1 tsp vanilla extract
1/4 tsp salt
Gelatin Topping:
6 grams powdered gelatin
( dissolved in 4 - 5 tbsp boiling water)
1 cup mango juice
3 tbsp white sugar
combine graham crackers crumbs,
sugar and melted butter together
press to fit in the baking pan
bake at 180 Celsius for 10 minutes
Prepare Mango Cheesecake filling:
in the mixing bowl, combine cream cheese
and sugar beat using electric beater
until well blended
add egg one by one, continue beating
then add mango puree, vanilla, salt and
lemon zest beating continuously until
well incorporated
Pour into baked crust
Bake at 180 Celsius for 45 to 50 minutes
Let cool.... prepare gelatin topping....
In an aluminum bowl combine
gelatin powder and sugar mix together
using wire whisk, add 4 - 5 tbsp
boiling water and continue whisking
until gelatin and sugar completely
dissolve together
add mango juice
whisk again until well blended
pour into cooled mango cheesecake
refrigerate for 3 hrs or more until completely
firm and set
After more than 3 hrs refrigerated
out mango cheesecake is done,
now it's ready to serve!

"Lumpiang Sariwa"

Lumpiang Sariwa recipe

Ingredients:
egg wrapper lumpia sauce
1 cup all purpose flour 5 cups water
1/2 cup corn starch 1/2 cup brown sugar
1 1/2 cups water 1/2 cup soy sauce
2 eggs 1 tsp salt
1/2 tsp salt 3 tbsp corn starch
1 tsp oil (3 tbsp water)
Filling
minced garlic chick peas
onion (chopped) cilantro (kinchay)
carrots (shredded) ground black pepper
string beans salt
cabbage tofu or tokwwa
bamboo shoot (boiled) 2 cubes soup stock
200 grams pork 1 tbsp fish sauce
1/2 cup fresh shrimps (patis)
place pork in a cooking pan,
pour in 1/2 cup water and salt
and cook until pork is tender, set aside....
heat oil in a pan and saute garlic until
light brown, add onions, shrimps
and soup stock, stir
add pork stir continuously
add sting beans stir and cook for
2-3 minutes
then mix in rest of vegetables
season with salt and patis, cook until
all vegetables are done
turn off the heat and let it cool in a strainer
while allowing liquid to drain out
make lumpia sauce:
combine water, sugar soy sauce and salt
in a sauce pan, bring to a boil,
add corn starch solution and stir until thick
add 1 tbsp minced garlic
when vegetables mixture already cool
wrap in lumpia wrapper, with a piece
of lettuce leaf
showing at one end
serve with lumpia sauce
sprinkled with finely chopped peanuts
