Learn how to cook this traditional recipe from my hometown in San Miguel Bulacan,Sinampalukang Manok is a sour soup made with chicken with bones,sauteed in garlic,ginger and onion, then simmered and flavored with young tamarind leaves and patis (fish sauce) and adding long green chili pepper and your choice of leaves vegetables such as chili pepper leaves, malungay or spinach.
Sinampalukang Manok recipe

Ingredientds:
1 kilo of chicken with bones
2 cups yyoung tamarind leaves
(fresh or pickled preserved)
1 tbsp sinigang broth mix
1 tbsp minced garlic
1 tbsp ginger (cut into strips)
1/2 cup onion chopped
ground black pepper and salt
1-2 tbsp patis (fish sauce)
long green chili pepper
spinach
water / cooking oil
cut chicken and season with salt and pepper
let stand for 30 minutes
Heat 1 tbsp cooking oil and saute garlic,
ginger and onion, add chicken and saute
together until change color
Add patis,cover and simmer for 1 minute
Add young tamarind leaves and cover again
and simmer for 1 to minutes
After 2 simmering for 1 minute
add enough water and cover again
bring to a boil until the meat is cooked
When the chicken is cooked add long green
chilies and spinach
Turn off the heat and cover for 1 minute
(don't over cooked the leaves)
Serve hot
