Ginisang Amapalaya with Tofu

2 medium ampalaya (bitter melon)
1 cup fried or extra firmed tofu
1/2 cup dried shrimps
3 cloves garlic crushed
1 cup sliced onion
1 cup chopped tomatoes
1 tbsp cooking oil
1 cup water
salt / ground black pepper

Ingredients:
2 cups dried raw peanuts
1 head garlic (thinly sliced)
salt
cooking oil
Thinly sliced garlic
Remove garlic from the oil
Set aside
Fry peanuts over low heat
stirring constantly
(for about 8 to 10 minutes)
Fry until color turns to copper brown
Turn off the heat and remove
peanuts from the oil
Transfer fried peanuts to strainer
to drain the oil, season with salt
garnish with fried garlic

3 ripe mangoes
2 cups boiled mini tapioca pearl
1 can condensed milk
10 grams gelatin powder
(dissolved in 3 tbsp hot water)
4 tbsp sugar(2 tbsp for jelly and cream)
1 tsp vanilla extract
1 cup mango juice
1/2 cup water
