Cassava Cake with langka
(please watch video below for procedure)
Ingredients:
800 grams grated cassava
2 large eggs
3 cups coconut milk
1 cup condensed milk
1/2 cup macapuno (sweetened coconut)
1/2 cup langka or jackfruit(cut into tiny bits)
1/2 cup grated cheese
100 grams butter (melted)
2 cups white sugar
1 tsp vanilla extract
Topping:
1 cup coconut milk
1/2 cup condensed milk
1 tbsp corn starch
In a mixing bowl combine melted butter
and gradually add sugar, mix well
Add eggs and beat until creamy texture
Add coconut milk and condensed milk
mix well then add grated cassava,jackfruit
and macapuno mix well to blend all
ingredients, add 1 tsp of vanilla extract
Brush baking pan with butter
Pour mixture in baking pan
Preheat oven to 180 Celsius
Bake for 45 to 60 minutes
Topping:
In a sauce pan blend coconut milk
condensed milk and corn starch
cook / stirring over low / medium heat
until thick, (about 5 to 10 minutes)
Pour creamy mixture on top of
baked cassava, make sure that cake
is already firm before pouring the mixture
Broil for about 5 minutes or until
top top is brown, (please watch carefully)
Let Cassave Cake cool before cutting
into desire shapes
