Filipino Cooking in Japan;= Bibingkang Malagkit is one of Filipino traditional rice dessert made with glutinous rice, coconut milk and sugar and topped with caramel toping, today I made this with my own version with ube (purple yam) give a try and enjoy the delightful ube flavored of this Ube Bibingkang Malagkit recipe...
Ube Bibingkang Malagkit (please watch video below for procedure)
4 cups glutinous rice(malagkit)
1 1/2 grated ube(purple yam)
2 cans thick coconut milk
1 1/2 cups dark brown sugar
1 1/2 cups white brown sugar
3 cups pandan water
1/ tsp salt
ube flavoring essence
add 3 cups pandan water and cook
In a sauce pan combine 1 can coconut milk and 1 1/2 cups dark brown sugar
In large woke or kawali place in can gata
(coconut milk) bring to a boil
Add salt and sugar, cook until dissolved
Add grated ube(purple yam)
Add few drops Ube flavoring essence
Add the rice and mix thoroughly
Until well incorporated
