Biko is a type of rice dessert that very popular and Filipino's favorite traditional dessert, it is very simple and easy to prepare with only few ingredients made with glutinous rice, coconut milk and sugar, Today I made this Biko recipe more tasty and delicious by adding and extra delicious flavor of ube halaya,(sweetened purple yam) and glutinous rice mixture and topped with yummy coconut caramel topping.
4 cups glutinous rice
1 1/2 boiled/grated ube(purple yam)
1 1/2 cups dark brown sugar(for topping)
1 1/2 cups white sugar(for biko rice cake)
2 cans coconut milk
3 cups pandan water(from boiled pandan leaf)
1/4 tsp salt
