Carrot Cake recipe

Ingredients:
160 grams all purpose flour
80 grams almond powder
120 grams confectioner's sugar
3 large eggs
1 large carrot (200 grams finely grated)
100 grams unsalted butter (R.T)
50 grams granulated sugar
1/2 tsp cinnamon powder
1/4 tsp salt
1 tsp lemon zest
2 tsp baking powder
1 tsp vanilla extract
1/4 tsp cream of tartar
Marzipan Carrot Paste
70 grams almond powder
70 grams confectioner's sugar
1 tbsp egg white
food coloring (red, yellow, green)
In a mixing bowl, combine flour,salt and
cinnamon powder, mix well and set aside
In another separate egg yolks from egg whites
In a large mixing bowl cream the softened
butter, then add confectioner's sugar and beat
until combine
Add egg yolks one at a time and continue
beating until creamy and fluffy
Add grated carrot and mix with rubber spatula
until combine
Add lemon zest and vanilla extract
Gradually add flour mixture while sifting
set aside
In a mixing bowl beat egg whites, add cream
of tartar and beat for 5 minutes
Gradually add granulated sugar and beat
continuously until stiff peaks form
Add/ pour the meringue to the flour mixture
and mix gently until incorporated
Pour the cake batter in baking mold lined
with cooking paper,distribute the batter
evenly all over the baking pan
Bake the cake in a preheated oven
for about 35 to 40 minutes
Making Carrot Marzipan:
combine confectioner's sugar,almond powder
and egg white,mix well,, divide the maripan
paste in 2 then add food color little by little
until you get desired color.
Form your Marzipan carrot decoration.
