Avocado and Tapioca dessert
(please watch video below for procedure)
3 - 5 ripe avocado
1 1/2 cups boiled mini tapioca pearl
5 grams gelatin bar
(or 10 grams powdered gelatin)
1 piece pandan tie into a knot
boiled in 3 to 5 cups water
1 cup shredded young coconut(buko)
1 cup sweetened nata de coco
1 cup condensed milk
1 cup all purpose cream
(add sugar or honey optional)
pandan flavouring essence
1 tsp vanilla extract or essence
3 to 5 cups water to boil pandan
boil pandan leaf for about 15 minutes
add the pieces of gelatin bar
until dissolved completely
add few drops of pandan flavoring essence
pour dissolved gelatin in mold pan
let it cool and firm for about 3 hrs
cut into squares or cubes
prepare all the ingredients
In large mixing bowl combine all the ingredients
Add cubes gelatin
Add cubes avocado
Use rubber spatula and gently mix
Transfer to a salad bowl
Top with cubes gelatin and avocado
Serve cold
