"Halayang Ube" (purple yam jam)

Halayang Ube is one o very popular Filipino dessert made out of fresh boiled grated Ube (purple yam)) mixxed with Gabi or Taro,flavored with coconut milk, sugar and condensed milk. Ube Halaya mostly prepare in any occasions especially during Christmas, New Year and Town Fiestas...
                                                     Halayang Ube recipe

                                         2 1/2 cups boiled grated Ube (purple yam)
                                         2 cups boiled grated gabi or taro
                                         2 cups white sugar
                                         2 cups thick coconut milk
                                         1 1/2 cups condensed milk
                                         1 tsp vanilla extract
                                         In a heavy non stick cooking  pan,combine
                                          coconut milk and sugar, cook over medium
                                          heat until sugar melted
                                          add grated ube (purple yam)
                                          continue stirring, then add grated gabi (taro)
                                          stir over low heat until mixture thickens
                                          add vanilla extract
                                         add condensed milk
                                          continue stirring until smooth and chewy
