"Puto Ube" (steamed rice cake)

Puto is one of the Filipino popular snack / merienda,there are many variations of puto recipe, today today I made Puto Ube with real and natural purple yam flavor, the result is fluffy steamed rice muffins,serve it hot with cheese, butter or freshly grated coconut will bring out Puto Ube more tasty and delicious...

                                                                        Ingredients:
                                                           2 cups rice flour
                                                          1 cup grated ube (purple yam)
                                                          2 raw eggs
                                                         1 cup granulated white sugar
                                                         2 tsp baking powder
                                                        1 1/2 cups fresh milk
                                                        2 tbsp melted butter
                                                       1/2 tsp salt
                                                            purple food color
                                         mix all dry ingredients together add grated ube (be sure
                                        to be well blended)add fresh milk,eggs and melted butter
                                       stir until smooth. Fill muffin pans for about 2/3 with mixture.
                                       Steam for 20 minutes or until done.Serve with cheese,butter
                                        or freshly grated coonut...

"Chicken and Cheese Rolls"

Simple and easy to prepare,but healthy and delicious chicken rolls recipe...

                                                                     Ingredients:
                                                   500 grams chicken breast
                                                         fresh ham
                                                        white flour
                                                        bread crumbs
                                                     2 raw eggs
                                                    2 to 3 tbsp fresh milk
                                                       salt and pepper
                                                  250 grams cheddar cheese
                                                        cooking oil for frying the chicken rolls

"Minatamis na Kundol

This is another sweet recipe that I've learned from my mother,how my mom made"Minatamis na Kundol" or Kundol Preserved (white melon gourd or wax gourd)...

                                                                        Ingredients:
                                                 1 medium size kundol or white gourd
                                                 1 tbsp of baking soda
                                                  lime or apog (lye water can be substitute)
                                                 prepare 1kilo of white sugar

                                           1/2 cup water
                                           1/2 cup cornstarch (disolved in 1/2 cup of water)

"Espasol"

 This is my own version of Espasol making, I've learned this from my mother when I was in Highschool, Espasol is one of my favorite traditional Filipino dessert or kakanin...
Ingredients
:
2 1/2 cups toasted glutinous rice flour
1 cup granulated sugar
2 cups coconut milk (1 can)
1 can condensed milk
1 tsp. vanilla extract
lemon zest
pinch of salt
jackfruit (optional)

"Carrot Cake"

Ingredients:

200 grams all purpose flour
1 large carrot
3 egg yolks
3 egg whites
100 grams confectioners sugar
1/2 cup granulated sugar
1 tsp. baking powder
3 tbsp.milk
3tbsp. canolla oil
1/2 tsp. salt
1/2 tsp. baking soda
1 tbsp.vanilla extract
100 grams salted butter
(marzipan paste)
70 grams almond powder
70 grams confectioners sugar
3 tbsp.egg white






"Pastillas de Leche"

How to make Pastillas de Leche:
                 

                        Ingredients;
                         6 cups cow fresh milk
                         1 cup granulated sugar
                         1 cup powdered milk
                           lemon zest (from one lemon)
                          additional granulated sugar for rolling

                                         pour milk and sugar in a large and deep cooking pan,
                                        stir in a medium heat until thick...

                                         when already done turn off the heat then add powdered
                                          milk, mix well, then transfer the pastillas in a buttered
                                          plate and let it cool down
