Ginisang Amapalaya with Tofu

2 medium ampalaya (bitter melon)
1 cup fried or extra firmed tofu
1/2 cup dried shrimps
3 cloves garlic crushed
1 cup sliced onion
1 cup chopped tomatoes
1 tbsp cooking oil
1 cup water
salt / ground black pepper
